When it comes to grocery shopping, I like to make one big grocery run, loading the cart with meats, veg, liquids, etc.. This means I can make whatever I’m craving in the week. One dish I made using whatever ingredients I have in the house is meatloaf. I have never made–nor eaten–meatloaf before. However, I was willing to try it out, especially since my husband admits it’s his childhood favorite.
In the end, Husband ate seconds and has been asking for more^-^
Recipe:
- 1 pack of ground beef
- 1 pack of ground pork
- Bacon
- Salt, Black pepper, Rosemary, Basil, Parsley, Smoked paprika (to taste)
- 1 shallot (diced)
- 1 thumb-sized ginger (grated)
- 3 cloves garlic (minced)
- 1 stalk celery (diced)
- ½ c. breadcrumbs
- 2 eggs
Combine everything–aside from bacon. Form into a loaf, and wrap with bacon to help keep the shape. Bake at 375-400 degrees Fahrenheit for 1 hour. Allow to cool for 10 minutes before serving.
